So, i figured I'd share some of my recent creations and we'll go ahead and begin with this lil diddy.
I made meatballs for Thanksgiving, and they turned out very well. Lets see if I can remember how I did them>....
Venison Meatballs in a Yogurt Sauce:
2 lbs lean ground venison
3 eggs
1-2 cups toasted breadcrumbs
1-2 Tbls favorite curry powder, toasted
1 tsp. Fresh finely chopped rosemary
2-4 Tbl brown sugar, depends on your tastebuds
1-2 Tbl BBQ sauce
Some soy to taste
salt and pepper
1/4 onion, finely chopped or pureed
Mix everything together and take a small chunk of the meat mixture and quickly fry it in a pan. This way, you can taste it before making the entire batch and realiziing you want more seasoning. After you're happy wiht the flavor, go ahead and make the meatballs the size of anything from large grapes to golf balls. Bake these at 350 F for about 20 minutes, or until you see the balls releasing juices. Then remove them from the oven and let them cool
Sauce:
2 cups golden raisins
vodka to cover the raisins and a few shots for the chef ;)
A tub of yogurt. I used a Vanilla flavor, but its up to you. Goat yogurt would be really good with this recipe.
Some liquid, such as meat juice or meat stock. About 2-4 cups.
salt and pepper
a pinch of sugar, depending on your choice of yogurt
Now, take about 2 cups of Golden raisins and put them in a non-reactive bowl, like stainless steel. Cover them with vodka and let them soak for an hour or so. When they're full again and plump with vodka, puree them to a paste. We used a crock pot for our version, but you can use a regular pot. Mix the yogurt, raisins together. Put the meatballs in your pot and cover them in the yogurt sauce. Add stock/juice until the balls are covered and let them reheat/simmer for about an hour or so. Don't let it boil, or you'll get the yogurt in a bad state, it may divide and get icky. If this happens, you can remove the meatballs and add a small about of a cornstarch/water mixture to bind the sauce back together again. After the balls/sauce have cooked for about 20 minutes, taste for seasoning. Salt/pepper/sugar and or a bit of lemon juice is all your should need.
